Blueberry Lime Coconut Water Granita

Naturally sweetened and refreshing, this Blueberry Lime Coconut Water Granita is a perfect, healthy alternative to ice cream! 

Coconut water is a delicious way to hydrate. Combine coconut water with sweet and tangy fruits, like blueberries & pineapple, and a little citrus and dessert has never been better (or more healthy).

Blueberries, especially wild Maine blueberries are so sweet, as well as the coconut water, that this dessert needs no extra sugar. Although, if you like a really sweet dessert, or can't find sweet blueberries, try a little honey, about a couple tablespoons or so, to sweeten this granita up. If you'd like, you can use all blueberries and just leave out the pineapple. This'll help up the sweetness level as well. Agave works too to keep this vegan.

This recipe makes a delicious smoothie. Just skip thawing the fruit and whip it up in a blender. Add in some spinach for a super refreshing and healthy smoothie! If you have any leftover granita, I like to make a smoothie by blending it with some fresh orange juice or more coconut water. You can't go wrong with this recipe!

*Measure the fruit while still frozen, then thaw. When ready to blend, add in all the juice and fruit into the blender with the rest of the ingredients. 

Blueberry Lime Coconut Water Granita
Serves 4 to 6
  • 1 (16.9 oz) bottle coconut water
  • 2 cups frozen Maine blueberries, thawed*
  • 1 cup frozen pineapple chunks, thawed*
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
In a blender bowl, add all ingredients and blend until smooth. Taste for sweetness and adjust if needed.

Pour the mixture into a baking dish, either 8x8 or 9x13 will work fine. (The larger pan will freeze faster and needs to be scrapped more frequently.) Freeze for about 2 to 4 hours, scrapping every 30 minutes to a hour with a fork to form fluffy ice crystals. After frozen and scrapped into ice crystals, scoop into serving glasses and enjoy!
